What you need

lb chuck roast

tbsp taco seasoning

Instructions
1. Preheat the oven to 325°F. 2. Season the chuck roast with salt, pepper, and taco seasoning. Place in a Dutch oven or baking dish, cover with a lid or foil. 3. Bake for about 4 hours until the beef is fork-tender. 4. Remove roast, shred into chunks with forks. If not shredding easily, bake for another 30 minutes. 5. Increase oven temperature to 425°F, toss beef in juices, spread out and return to oven for 20-25 minutes until crispy. 6. Mash avocados in a bowl, add lime juice, orange juice (if using), salt, and pepper. Fold in red onion and cilantro. 7. Heat tortillas in a skillet or over a gas flame until warm. 8. Spread guacamole on tortillas, add beef, white onion, cilantro, and salsa. Serve immediately.
