Unstuffed Pepper Skillet is a quick and easy dish that combines the flavors of stuffed peppers into a simple skillet preparation. Lean ground beef, bell peppers, and aromatic spices are cooked with rice and topped with melted cheddar cheese for a comforting meal.

What you need

cup cheddar cheese

clove garlic clove

lb ground beef

tsp paprika

cup beef broth

tsp salt

tsp chili powder

tsp ground cumin

tsp black pepper

cup white rice

tbsp tomato paste

tsp red pepper flake
tsp dried oregano
Instructions
1. Heat a large skillet on medium-high heat. Add olive oil until heated. 2. Add onion and bell peppers. Sauté until soft, roughly 3-4 minutes. 3. Add garlic and oregano until fragrant, about 30 seconds then add the ground beef and seasonings. 4. Break apart the beef. Cook until the beef is browned and almost cooked through. 5. Stir in the tomato paste. 6. Add the can of diced tomatoes (no need to drain), uncooked rice, and beef broth. 7. Bring everything to a boil, reduce to low heat, cover and simmer for 15-18 minutes until the rice is tender and liquid is mostly absorbed. 8. Turn off the heat, stir, and add extra broth if needed. 9. Add the cheddar cheese to the top of the skillet. Enjoy!
